So, I always wanted to learn how to make fish tacos and suddenly after a trip to Costco and coming home with some frozen Cod…I decided it was the perfect moment. If you have been a little afraid of trying out fish tacos but have always wanted to, this is the perfect place to start! Not to mention they are healthy, too.
For this version of my fish tacos, I used frozen Cod portions, but I have also made this with Salmon and it’s just as good. I thaw out the number of portions I need and then season them with a fave of mine, Mrs. Dash Southwest Chipotle. I also drizzle a little extra virgin olive oil on them to prevent the fish from sticking.
I cook the fish on medium heat for about 3 – 4 minutes on each side, or until they flake easily with a fork. If you want a crispy finish, turn up the heat for the last several minutes. I use a cast iron skillet to cook these, but you can certainly use a non stick skillet if you don’t own one of these beauties!
While the fish is cooking, I chop up whatever toppings I have on hand….on this particular night I had some fresh tomatoes from my mom’s garden, some crispy romaine lettuce (using the lightest green end for that extra crunch, red cabbage would be awesome too!) and some chopped cilantro. I LOVE the addition of cilantro because it gives the fish tacos that extra flavor boost but there are PLENTY of occasions I don’t have any on hand…so don’t worry if you don’t have it. Sometimes I use shredded mozzarella cheese, too.
And finally to top off my fish tacos, a dollop of my secret sauce! I use about a 1/4 cup of light sour cream, a tablespoon of light mayo, and some adobo sauce [pictured left]. I add about a teaspoon at a time until I reach the right flavor. This stuff is spicy so you definitely don’t want to over-do it! Sometimes I throw in a dash of cumin or taco seasoning for a little more depth and you can even add a squeeze of lime. But the great thing about this sauce is that you don’t have to! It’s great with just the three main ingredients.
Now, you’re ready to build your taco….using your fave soft shell wrap. I normally grab the high fiber low carb version, but get the one you love! I promise you, these will be the best fish tacos you have ever had…..warm up some black beans and your dinner is ready for a quick week night option.
